What separates cookware companies is not who makes the best material, but who does the best job with their design and branding - basically whoever has all their boxes checked so they can command a higher price point. In short, you don't need to buy expensive cookware unless you want to use it every day (or if it matches your décor).
Is Buying Expensive Cookware Worth It?
Buying expensive cookware can be worth it. But it depends on the type of cook you are.
Three types of cooks-
1) The Professional Cook- these people need excellent culinary tools that will make their dishes perfect, and they have a lot of cooking experience so a hefty price tag doesn't bother them as much.
2) The Hobbyist - These people should invest in good quality equipment because they are passionate about cooking and look for adventuresome dishes to expand their skillset. They also need good equipment for regular use because you'll get better at cooking the more you do it.
3) The Couch Potato Chef- These people might not have any interest in what goes into making food beyond assembling a dish with minimal effort.
Can You Mix And Match Cookware Or Should You Stick To The Same Material?
You can mix and match cookware, but it's important to take into consideration the co-efficiency of heat distribution. The worst possible scenario is using an aluminum pan for a recipe that calls for copper--the cooking temperature will not be uniform throughout the pan because aluminum does not distribute heat evenly. Copper cookware, on the other hand, distributes heat more evenly than other types of metals typically used in kitchenware due to its inherent properties as an excellent conductor of heat.
